An under 30-minutes, easy to assemble and healthy brunch recipe.

Ingredients:

● Soft boiled eggs, peeled: 2

● French beans, cut into medium sizes: 8-10 pieces

● Sliced carrots: 5-6 pieces

● Sliced sweet potatoes: 4-5 pieces

● Sliced onion: 3-4 pieces

● Sliced tomatoes: 4-5 pieces

● Finely chopped green chillies: ½ teaspoon

● Finely chopped garlic: 1 teaspoon

● Black sesame seeds: 1 teaspoon

● Crushed black pepper: 1 teaspoon

● Lemon juice: 1 tablespoon

● Olive oil: 1 tablespoon

● Black salt

Recipe:

● Blanch french beans, carrots and sweet potatoes. Strain excess water

● Take a nonstick pan, add olive oil and heat

● Now add garlic and saute until golden in colour

● Add sweet potatoes, carrots, french beans with a pinch of salt and toss lightly

● Pour the tossed vegetables in a mixing bowl

● In the same nonstick pan, dry roast some sesame seeds

● Mix sesame seeds, sliced onions, tomatoes and chopped chillies. Add salt and pepper along with lime juice

● Add sesame seeds and eggs and give a light handed toss

● Check seasoning and enjoy the salad

Tip:

● You can store the vegetable stalk for later use in curries or soups

● You can also use greek yogurt as dressing in this salad

Soft crepe+pancakes with cheesy yolk filling and some Christmas leftover cranberry sauce — a dish that’s love at first sight.

Ingredients:

For crepancakes

● Flour: 1 medium cup

● Baking powder: 1 teaspoon

● Powdered sugar: 4-5 tablespoons

● Eggs: 2

● Salt: 1 small pinch

● Butter: 4 tablespoons for preparation; 2-3 tablespoons for making the crepes

● Full fat milk: 1 cup

For egg yolk spread

● Egg yolks of half boiled eggs: 4

● Cream cheese: 5-6 tablespoons

● Icing sugar: 3-4 tablespoons

Recipe:

For crepancakes

● Sieve flour and baking powder

● Beat the eggs until light and fluffy

● Beat the butter too until light

● Mix eggs and butter together and beat for 1 minute and then give a quick, light handed single fold

● Now add flour, salt and fold gently

● Add milk to make the crepe-like batter

● Brush butter on a nonstick pan and heat

● Keep the flame low, add a small amount of the batter and spread evenly. The cupcakes should neither be too thick nor too thin

● Cover and cook for a minute and flip

● Brush some butter and cook until both sides are golden brown and ready

For the spread-

● Mix all the ingredients together and beat until light and fluffy

Assembling together-

● Take one crepancake and add a generous amount of yolk filling and fold it like an omelette. Dig in!

A touch of winter greens and some bacon.

Ingredients:

● Boiled eggs, cut into halves: 6

● Finely chopped mustard greens: 2 tablespoons

● Roasted white sesame seeds: 1 teaspoon

● Fried bacon, finely chopped: 3-4 tablespoons

● Lemon juice: 1 teaspoon

● Black pepper powder: 1 teaspoon

● Butter: 1 tablespoon

● Salt

Recipe:

● Scoop out the egg yolks and mash well

● Add butter on a pan and heat. Add the mustard greens and fry for 2-3 minutes

● In a mixing bowl, add egg yolk, mustard greens, sesame seeds, bacon, lemon juice, black pepper powder and salt. Mix well

● Place the egg whites on a plate

● Add a dollop each on the egg whites, sprinkle some black pepper powder and the devil’s eggs are ready to try

Ingredients:

● Eggs: 3

● Grated cheese: ½ of a small cup

● Chilli flakes: 1 teaspoon

● Black pepper powder: 1 teaspoon

● Full fat milk: ½ of a small cup

● Butter: 1 tablespoon

● Salt

Recipe:

● Add butter on a nonstick pan and heat

● Lower the flame and break the eggs, one by one

● Start scrambling the eggs slowly, adding little milk at intervals

● Once the entire milk has been used and the eggs are scrambled, add cheese and mix well

● Add seasonings and cook for 2-4 minutes, until there is no liquid residual on the pan

● Once the eggs are gooey enough, turn off the heat and enjoy!

This egg halwa recipe has quite a few eggs, dollops of desi ghee and loads of dry fruits.

Ingredients:

● Eggs: 8

● Full fat milk: 2 cups

● Bay leaf: 1

● Cardamom: 2

● Cardamom powder: ½ teaspoon

● Powdered sugar: ½ cup

● Ghee: 8-10 tablespoons

● Chopped dry fruits: ½ of small cup

● Condensed milk: ½ cup

Recipe:

● Beat the eggs well

● Take a kadhai, add ghee and heat. Add bay leaf, cardamoms and saute

● Keep the flame low and start adding the beaten eggs slowly. Stir constantly

● Once the entire egg has been added to the kadhai, add milk in small portions and keep mixing continuously

● Add sugar and mix well

● Cook for 5-6 minutes and add condensed milk, dry fruits and cardamom powder

● Mix well and cook for another 4-5 minutes

● Once the eggs have halwa like texture and there is no liquid residue on the pan, turn off the flame. Your egg halwa is ready.
