Acclaimed chef Manu Chandra’s made waves at the Cannes film festival with a menu encapsulating the culinary essence of India and France. The chef’s new bespoke catering brand Single Thread curated a line-up highlighting the Indian culinary diversity with French twists. The menu featured picks like vada pav made with French brioche buns, duck confit galouti kebabs, Paniyaram madeleines and more.
Blogger and chef Simi Mathews who runs the Instagram page @OnSimy’sPlate was inspired by Chandra’s winning menu and used millet idli batter to make some quirky desi madeleines.
“Presenting my Millet Idli Madeleines. I feel so glam and French already, lol! It's just Millet Idli batter that I poured into my Madeleine tray and baked in the oven. It was great straight out of the oven but turned hard within 10 minutes so I wouldn’t recommend making this unless you want to pretend to be all fancy schmancy and posh and do a photo shoot,” the blogger wrote.
