The delicate, golden-hued Jhuri Doi is one of Bengal’s best-kept secrets and modern doi lovers still may not know about this sought-after recipe! The dessert which originated in Murshidabad is luscious, creamy (a kilo of Jhuri Doi uses double the quantity of milk than a kg of normal mishti doi, which is the secret to its creaminess) and boasts a balanced sweetness. Instead of the caramelised strains of colour, you find in mishti doi, you’ll spot golden speckles of honey which is usually stirred into milk.
The Kolkata label Doiwala is perhaps one of the only platforms selling authentic Jhuri Doi in the city. The production team from Doiwala hails from Murshidabad, which is how they could access this 300-year-old recipe which has been passed down the generations. Doiwala sells almost 80kgs of Jhuri Doi every day!
