Aloo in Kolkata Biryani is an emotion. The soft, perfectly boiled potato is so flavourful when you eat it with long grains of rice! But do you know how this vegetable became a popular addition to the Kolkata biryani? Chef Kunal Kapur decodes it in his latest episode of Kamaal Hai on Instagram. Chef Kunal mentions two popular beliefs. One of them is the story related to Nawab Wajid Ali Shah, which we often hear. In a recent interview with Food journalist Kunal Vijaykar, the descendant of Wajid Ali Shah, Manzilat Fatima, owner of home diner Manzilat’s, also revealed how aloo was introduced in biryani.
