A refreshing blue pea tea lemonade recipe to try at home

If you’re craving for a spritzy lemonade this week, try Ritika Jaiswal’s recipe at home. The Kolkata girl, who runs the food blog @kolkatafoodie, uses butterfly pea flower aka Aparajita as the hero ingredient in her recipe. Extremely versatile, the subtle notes of the flower pair beautifully with lemon slices and sprigs of mint making each gulp (yes, you’ll be taking gulps) as refreshing as ever.
Ingredients:
- Warm water: 3 cups
- Dried butterfly pea flowers: ½ cup
- Granulated sugar: ⅓ cup
- Lemon juice: ⅓ cup
- Soda water: 1 can
- Lemon slices
- Mint leaves
- Ice cubes
Method:
- Add warm water to butterfly pea flowers and soak for 10-15 minutes.
- Once the colour is visible enough, strain and discard the flowers.
- Add sugar and lemon juice to the tea. Mix well and pour it over a glass of ice.
- Add soda and garnish with lemon slices and mint leaves.
Your spritzy lemonade is ready!
