One can never have enough of sambar, especially during the winter season. But ordering it every time a craving strikes can feel like a bit of a stretch. This is where MasterChef Pankaj Bhadouria steps in with her sambar powder recipe, perfect for when you need a quick accompaniment for your dosas… and more. As part of the chef’s 11th episode of ‘From Scratch’, the recipe features an amalgamation of pulses, roasted spices, dried red chillies and curry leaves. After roasting the pulses, chillies, and leaves, she lightly fries various spices and a bit of tamarind before blending everything into a fine powder. While we haven’t tried it yet, the vibrant yellow powder looks tangy and promises to be a lifesaver for those sudden potluck parties where south Indian cuisine is on the menu.
