Treat your friends to Mango White Chocolate Mousse recipe at home

Craving the Maldives in this heat but can’t go on a vacation? Bring the vacation home with this Mango White Chocolate Mousse recipe, crafted by Hilton Maldives Amingiri Resort and Spa executive pastry chef, Murugan Sailappan.
To make the mango confit, you need:
- 2 cups mango purée
- 2 whole mangoes cut in cubes
- Half a cup glucose powder
- Half a cup sugar
- 1 tablespoon pectin NH
- 1 teaspoon lemon juice
Heat the mango purée and sugar. Upon boiling, add pectin to the mix. Switch off the flame and add mango cubes and lemon juice.
For the white chocolate mousse, you need:
- 4 cups cream
- 3 vanilla pods
- 1 gelatin leaf
- 1 cup white chocolate
Heat the cream and add the vanilla to infuse for 30 minutes. Soak the gelatin in cold water. Strain the vanilla and reheat it until lukewarm. Add gelatin to the mix, along with melted white chocolate.
For the glaze, you need:
- 2 cups white chocolate
- 1 cup milk
- 1 cup mango purée
- 1 gelatin leaf
Soak the gelatin in cold water, heat all the ingredients, switch off the flame and add gelatin. Let it cool down.
Assembling it together:
Mix the white chocolate mousse and the mango confit. Place it into a mould and keep in the freezer for four hours. When ready, pour the mango glaze on the mousse and serve it as desired.
