You have had potol bhaja, potol chingri, aloo-potoler torkari, potoler dorma, shorshey potol. But, have you tried potoler bharta? Potol or pointed gourd is a summer staple vegetable, but we do run out of ways to make it. Not always do we like curries and fries, and this bharta recipe, with its subtlety and simplicity bags a clean win. The recipe is by Kolkata blogger and home chef Riya, who is also known by her Instagram handle name @hyangla_bibi.
For ingredients, you’ll need a few pointed gourds, garlic, green chilli, coriander leaves, mustard oil, nigella seeds, whole dry red chilli and salt. Riya has given a step by step process along with the recipe video for you to follow. Have this humble potoler bharta with some steamed rice, and enjoy the joys of minimalism.
