Decades
ago, around 2010, Indian and Chinese cuisine dominated restaurant menus, with
dishes like Reshmi Tikka and Tandoori Chicken becoming household favourites.
These classics, known for their robust flavours and aromatic spices, were the
go-to choices for many, including masterchef Subhojit Sen.
Inspired
by these traditional dishes, the chef has taken a culinary trip down memory
lane with a contemporary twist. When his mother requested Pora Chicken, which
translates to roasted chicken, he created a unique and tantalising dish from
scratch. The result was a smoked whole chicken tengri (leg piece) paired
with the delightful sweetness and tanginess of mango, known as Kacha Mitha Aam.
This
dish, called Morich Murgh Tengri, is a perfect choice for those looking to
explore new culinary horizons. The marinating process is crucial to infusing
the chicken with rich, complex flavours.
Masterchef
Subhojit Sen encourages everyone to try this recipe at home and share their
experience. The smoky, tangy and sweet flavours are sure to become a new
favourite in many households, just as it has in his.
