On some weekends, minimalism is the necessity. After a long week, some Saturdays are all about putting on a sheet mask, binge watching Netflix and having a simple plate of steamed rice or roti with some egg keema. No mutton rogan josh or biryani, just a humble egg recipe that is quick to make and brings a smile on the face.
To make this egg keema, all you need is boiled and grated eggs, onions and tomatoes, some spices, a few green chillies and fresh coriander leaves. The recipe is by digital creator Shyamalima Tamuly and is a refreshing take moving over regular dimer jhol or dim kosha.
A few kitchen tips:
- Try to keep a few extra eggs boiled and ready during the week. Saves time
- Store basic spice pastes, like ginger and garlic, onion, green chilli, tomato and dry whole red chilli. Makes cooking quicker and can be stored for 3-4 days in the fridge in an airtight container
