Is it even a good monsoon if there’s not a hilsa-dig in? While we will never ask you to move over from Ilish Bhapa, Ilish Paturi or the classic Ilish Bhaja, here’s an Ilish Biryani recipe that you should try.
Ingredients:
- Pre-cooked long grain rice: 2 medium cups
- Hilsa pieces: 4
- Curd: 1 small cup
- Ginger-garlic-green chilli paste: 3 tablespoons
- Kashmiri red chilli powder: 1 tablespoon
- Red chilli powder: 1 tablespoon
- Milk: 1 large cup
- Saffron: 1 tablespoon
- Kewra water: 2 tablespoons
- Rose water: 1 teaspoon
- Readymade biryani masala: 2 tablespoons
- Mustard oil: As per requirement
- Ghee: 6-7 tablespoons
- Salt: To taste
- Bay leafs: 10-15
Recipe:
- Take the rice in a bowl, add 1 tablespoon of biryani masala. Add salt as per taste and mix gently
- Mix curd, ginger-garlic-green chilli paste and two red chilli powders together and make the primary spice mix
- Coat the hilsa pieces with this spice paste and keep aside for 10-15 minutes
- Mix saffron in milk along with kewra water and rose water. Keep aside
- Now take a kadhai and add mustard oil. Heat well and add the coated hilsa pieces and fry for about 3-4 minutes on medium flame
- Take out the hilsa pieces and add the spice paste. Add ½ tablespoon biryani masala and cook for 5-7 minutes on medium flame
- In a biryani handi or any utensil you cook biryani in, grease with ghee and make a bed with bay leafs
- Add a layer of rice, pour a gentle amount of the spice paste and add some saffron milk. Add ghee
- Place the hilsa pieces and add another layer of rice. Add ghee. Try to keep two layers of rice only
- Add the remaining spice paste and saffron milk
- Cover the utensil and cook for 20-25 minutes on medium flame. Serve hot
Tip:
- You can also add boiled eggs and deep-fried potatoes
- You can also use biryani attar
