Nothing like a soft and chatpata locho to start your day. If Gujarati snacks are a favourite, this street-food favourite from Surat is a must-try. Much like the khaman (or dhokla), but with a bigger punch of flavour, the steamed farsan is said to get its name from its mish-mash like appearance, a contrast to the dhokla or khandvi’s neat pieces and rolls. The story is that locho was discovered accidentally when a vendor was making khaman and accidentally added more water.
Since travelling to Surat might not be on the cards soon, chef Natasha Gandhi has shared her recipe for a locho you can make at home. If you’re looking for an offbeat but wholesome breakfast this week, all you will need is some chana dal (chola dal), poha (chire), yoghurt, ginger and chillies, and a blender to make your locho batter.
