If you’re baking a cake, making little chocolate truffles or simply indulging in seasonal strawberries, you need a go-to ganache recipe. Here’s a recipe by chef Anahita Dhondy Bhandari, and it comes with helpful pro-tips and pointers.
Ingredients
Dark Chocolate: 100 grams
Cream: 100 grams
Method
- Chop your chocolate into small pieces and place in a bowl.
- Put your cream in a saucepan and place over medium heat. Allow cream to heat until simmering and almost boiling.
- Pour the hot cream over the chopped chocolate and let it stand for about 3-4minutes.
- Using a whisk, mix your chocolate until smooth and silky.
Pro Tip: “Don’t heat the chocolate directly over fire. Use either short bursts in the micro or on a double boiler. Always wait for your ganache to come to room temp to use and my secret tip —add 1 tablespoon of butter towards the end for the shiniest ganache ever!” says the chef.
