Dessert recipes with Oreos have been trending for a while now. Oreo cheesecakes, pastries, ice-creams and many more Oreo-flavoured desserts have been picked up by different brands and confectioneries. But good ol’ glucose, Marie and even the healthy digestive biscuits can also be turned into delicious desserts.

While Oreos are great, they have a distinct flavour of their own. But classic glucose and Marie biscuits are versatile and go well with and pick up different flavours. My Kolkata brings to you three easy recipes with biscuits that you can try at home.

Diplomat Biscuit Pudding

Diplomat Pudding is a Hungarian dessert that was a popular item in diplomatic conferences. Although the recipe of the biscuit version is different, the dessert looks very similar to the original Diplomat Pudding.

Ingredients

  • Glucose biscuits: 20-30 pcs
  • Milk: 1 litre
  • Condensed milk: 300 ml
  • Vanilla essence: ½ tsp
  • Corn flour: 1 tbsp
  • Apple: 1
  • Banana: 1
  • Strawberry: 5-6
  • Black currants/raisins: ¼ cup
  • Cashews/Almonds (chopped): ¼ cup
  • Chocochips (optional)

Method

  • Wash and chop the apple into small cubes. You can peel the skin if you wish to
  • Peel the banana and cut into thin disc-shaped slices
  • Wash the strawberries and remove the stem. Slice them thin
  • Now in a heavy-bottom pan, pour the milk and when it is warm, pour the condensed milk and vanilla essence. Mix well and let it boil for 5-10 minutes
  • Take half a cup of water and pour the cornflour. Mix well
  • Pour it into the milk and stir well. When the milk thickens, turn off the flame. Your custard is ready
  • Take a baking tray and lay the biscuits side by side to form a layer
  • Cover the biscuit layer with a layer of the custard
  • Now place the cut fruits on top. You can also divide the fruits into individual layers but here we are putting them together
  • Now pour some more custard and cover the fruits well
  • Next, put the blackcurrants/raisins and chopped cashews/almonds
  • Layer them with the remaining custard.
  • You can garnish the top layer with chocochips or simply crush some biscuits and sprinkle on top
  • Refrigerate the tray for an hour and enjoy your diplomat pudding made with biscuits!

Tips

  • You can use custard powder mix and sugar, skipping the condensed milk and vanilla essence
  • One has to be quick with the layering as the custard will solidify as it cools down
  • You can use any kind of fruits you want to
  • Digestive biscuits can be used too
  • You can make the same recipe in a glass or mason jar

Chocolate Fudge Cake

There may be nothing better than a smooth, soft fudge cake, but have you ever tried it with biscuits? A perfect, layered chocolate fudge cake with biscuits is a treat for the senses.

Ingredients

  • Marie biscuits: 200g
  • Milk: 500ml
  • Condensed milk: 100ml
  • Cornflour: 1 tbps
  • Dark chocolate slab: 150g
  • Cocoa powder: 2-3 tbsp
  • Marshmallow (for garnishing)

Method

  • Melt the dark chocolate by double-boiler method
  • Simultaneously, pour the milk in a heavy-bottomed pan and when it’s warm, pour the condensed milk in it. Mix well
  • Now, let the milk boil on medium flame
  • Once the chocolate is melted, pour it into the milk and stir well
  • At this point, you can start adding the cocoa powder and stirring it well
  • Take half a cup of water and mix the corn flour well
  • Turn the flame to sim and add the corn flour mix and keep stirring it well. Turn off the flame when the milk starts thickening.
  • Crush the marie biscuits with hand or in a grinder. It does not need to be crushed well.
  • Divide into two parts
  • Now in a well greased baking pan, layer the first portion of crushed biscuits
  • Pour half of the milk-chocolate mix
  • Then again layer it with the crushed biscuits
  • Top with the liquid
  • With a spoon, spread the fudge equally
  • Refrigerate for 2-3 hours to set it well
  • Take it out and cut into cube or triangle shapes
  • Before serving, you can top the pieces with toasted marshmallows or sprinkle crushed biscuits or cocoa powder

Tips

  • The same recipe can be made with digestive biscuits
  • This can also be layered and served in a glass
  • Make sure your biscuit layers are thick enough to hold the fudge

Ice-cream Sandwich

This dessert takes us back to our childhood days, when we would crave for those ice-cream sandwiches after school. Take a bite of nostalgia at home with this easy recipe.

Ingredients

  • Glucose biscuits: 10 pcs
  • Heavy cream: 2 cups
  • Condensed milk: 300ml
  • Milk: 1 cup
  • Vanilla essence
  • Gelatin: 1 tbsp

Method

  • To make the ice cream, we need to freeze the metal utensils and kitchen tools you need in the freezer for 24 hours
  • Also, chill the heavy cream and condensed milk for 24 hours
  • In a pan warm the milk and add the gelatin
  • Mix the condensed milk and vanilla essence. Let it boil
  • Turn off the flame when the milk thickens and let it cool completely
  • Till then pour the cream in a separate steel bowl and whip it to a cream
  • Now add the cooled down condensed milk and vanilla essence mixture and blend everything well
  • Take frozen baking tray and pour this into it
  • Use a cling wrap to cover the top and freeze for another 10-12 hours
  • When the ice cream is set, cut it into a size similar to your biscuits
  • Put the ice cream between two biscuits and press it nicely

Tips

  • Gelatin helps the ice cream to not melt easily making the biscuits soggy
  • You can play around with different for the ice creams
  • Freezing the utensils will help maintaining the temperature and will save the ice cream from forming water crystals
