Gurer sandesh has two broad types — norom paak and kora paak. Norom paaker sandesh is soft, while kora paak sweets are hard. The melt-in-the-mouth norom paaker gurer sandesh at Bhim Chandra Nag is among the best and available in a wide variety. Innovation, thy name is Balaram Mullick and Radharaman Mullick! The Nolen Gurer Souffle (right) is a modern twist to the traditional ‘gurer sandesh’. The creamy souffle with a hint of jaggery has a subtle, lingering taste. The souffle is sold at Rs 450 for 500 grams and is available in smaller portions as well, at Rs 45 a serve. Girish Chandra Dey and Nakur Chandra Nandy on Ramdulal Sarkar Street in north Kolkata has always been the go-to place for mishti aficionados. Besides traditional sweets, there are some newer varieties on offer, too. Mausumi Sandesh made of ‘chhana’, grated coconut, gur and nuts is a winner. Gurer Monohara is one of the most popular sweets at the shop. Be it Gurer Jolbhora or ‘kanchagolla’ with coconut, each has its own share of surprise.
