Five easy and offbeat pizza recipes to bookmark for all days

Fruit and cheese, leftover meat, tangy compote and more — nothing wrong with a few experiments for a delish slice of pie

Cheat days, house parties, long work days, bad days — some great bread and cheese baked to perfection can be the one true cure.

Here are five pizza recipes, easily made in a microwave and with readily available ingredients that will surprise the gourmet in you and give you a slice that will bring a wide grin on your face:

Green apple and feta cheese

Fruit and cheese is usually a winning combination. But what about fruit on pizza (that’s not the polarising pineapple)? Apple and feta cheese on pizza might sound off, but we say make ’em, have ’em, and love ’em.

Psst… If someone points out the calorie count in pizzas, show them the apples and feta.

Ingredients

  • Readymade pizza base: 1
  • Sliced green apple: 1 large
  • Sliced red apple: ½
  • Feta cheese: 100gm
  • Walnuts: 2 tablespoons
  • Pizza seasoning: 2 tablespoons
  • Black pepper powder: 1 teaspoon
  • Lemon juice: 1 tablespoon
  • Olive oil: 1 tablespoon
  • Black salt

Recipe

  • Put the pizza base on a plate
  • Spread half of the feta cheese as first base and sprinkle some pizza seasoning, salt and black pepper powder
  • Marinate the apple slices with some salt and lemon juice
  • Arrange the apple slices and add walnuts on the top
  • Top with the remaining feta cheese
  • Now add some more pizza seasoning and drizzle olive oil all over the pizza
  • Preheat the oven for 10 minutes
  • Put the pizza on a greased baking tray and cook on convection mode for 8-10 minutes
  • Slice up and enjoy

Strawberries and cheese

Making the most of strawberries, because summer is right round the corner.

Ingredients

  • Readymade pizza base: 1
  • Sliced pineapples: 15 pieces
  • Sliced strawberries: 8-10 pieces
  • Pepperoni: 8-10 pieces
  • Mint leaves: 4-5
  • Pizza seasoning: 1 tablespoon
  • Sugar: ½ teaspoon
  • Chilli flakes: 1 teaspoon
  • Cheese slices: 8-10
  • Olive oil: 1 tablespoon
  • Black salt

Recipe

  • Marinate the pineapples with salt, chilli flakes and sugar and keep aside. Strain excess water before adding them to the pizza
  • Take the pizza base and add a layer of cheese slices
  • Now place the pepperoni, pineapple and strawberry slices on the top of each other
  • Sprinkle the pizza seasoning and spread the top layer of cheese
  • Put the pizza on a greased baking tray and cook on convection mode for 6-8 minutes
  • Garnish with a few mint leaves, sprinkle some more seasoning and chilli flakes and enjoy your sweet and savoury pizza

Olives, shredded meat and cheese

Ingredients

  • Readymade pizza base: 1
  • Cheese slices: 15 pieces
  • Leftover meat shredded: 1 small bowl
  • Olives cut into halves: 10-12
  • Pepperoni: 10 pieces
  • Pizza seasoning: 1 tablespoon
  • Lemon juice: 1 tablespoon
  • Chilli flakes: 2 teaspoons
  • Pizza sauce: 2-3 tablespoons
  • Black salt

Recipe

  • Spread pizza sauce on the base
  • Mix the shredded meat with lemon juice, chilli flakes and some salt if required
  • Add a layer of cheese first and then a layer of shredded meat. Now place the pepperonis and olives
  • Sprinkle the pizza seasoning and some chilli flakes
  • Add the remaining cheese slices
  • Put the pizza on a greased baking tray and cook on convection mode for 5-8 minutes

Lemon compote, cheese and sun-dried tomatoes

The right amount of tang, the correct kind of cheesiness, and a slice to be teamed with some Coke (diet, if you please) or some wine.

Ingredients:

  • Readymade pizza base: 1
  • Grated cheese: 100gm
  • Lemon compote: 3-4 tablespoons
  • Sun dried tomatoes: 8-10
  • Chopped sausages: 15-20 pieces
  • Sliced onion: 1 large
  • Sliced capsicum: 1 medium
  • Pizza seasoning: 1 tablespoons
  • Chilli flakes: 1 teaspoon
  • Parsley leaves: 2 teaspoons
  • Olive oil: 1 tablespoon

Recipe:

  • Layer the base up following the order of the ingredients as given above
  • Put the pizza on a greased baking tray and cook on convection mode for 5-7 minutes

Tip

How to make lemon compote —

Add 1 large cup lemon juice, 1 teaspoon lemon zest, 1 medium cup of powdered sugar, 2 teaspoon cornstarch and 1 pinch of black salt into a nonstick pan and keep stirring until it reaches a consistency where it is sticky and thick. Bring the compote to room temperature before spreading on the pizza

Keema fry with roasted tomato and onions

The perfect weekday-midweek-weekend pizza recipe exists, especially if you have leftover cooked keema and are in the mood for something different but quick.

Ingredients

  • Readymade pizza base: 1
  • Cooked Keema: 1 small cup
  • Grated cheese: 1 medium cup
  • Roasted tomato roughly chopped: 1 large
  • Roasted onion roughly sliced: 1 large
  • Lemon juice and green chilli paste: 1 tablespoon
  • Pizza sauce: 2-3 tablespoons
  • Olive oil: 1 tablespoon

Recipe

  • Add a layer of cheese on the pizza base and spread the pizza sauce first and then top it up with the keema
  • Now spread a layer of the tomato paste and green chilli paste
  • Add the onion slices followed by a layer of cheese
  • Put the pizza on a greased baking tray and cook on convection mode for 5-8 minutes
