Succulent mutton dishes that promise instant foodgasms… if that is not the plan for a perfect weekend, then what is? With winter finally here, there’s no better time to get busy cooking without sweating buckets than now. So, to beat the chill, here are some hearty, warming and easy recipes for an array of mutton dishes.
Mutton with mustard greens

Few ingredients, powerful flavours — try out this pathar mangsho recipe with shorsher saag with piping hot rice or roti.
Ingredients:
- Mutton: 1kg
- Mustard green paste: 1 large cup
- Fried onion: 1 medium cup
- Ginger and garlic paste: 2 tablespoons
- Green chilli paste: 2 teaspoons
- Slit green chillies: 4-5
- Lemon juice: 2 tablespoons
- Garam masala powder: 1 teaspoon
- Nutmeg powder: 1 teaspoon
- Red chilli powder: 1 teaspoon
- Bay leaf: 1
- Salt
- Sugar
- Mustard oil
- Ghee
Recipe:
- Marinate the mutton with fried onion, ginger and garlic paste, green chilli paste, lemon juice, garam masala powder, red chilli powder and salt. Don’t forget to add a dollop of ghee too. Minimum marinating time is 30 minutes, though it is highly recommended you keep it overnight
- In a pressure cooker, add mustard oil and heat
- Add bay leaf, saute for 5-7 seconds and pour the mustard green paste
- Add a pinch of salt and sugar, and saute the paste for 8-10 minutes on low flame
- Now add the mutton and mix well with the mustard green paste
- Cook on high flame for 8-10 minutes without lid, and for 15-20 minutes on flame with a light lid
- Uncover, add warm water considering the gravy you want
- Add slit green chillies and some salt. Cover and cook on low flame for two whistles
- Turn off the flame and allow some standing time as the steam evaporates
- Take the lid off, check seasoning and turn on the flame again
- Add nutmeg powder and some ghee, cook on high flame for 3-5 minutes and serve smoking hot
Mutton broth soup with broccoli and oyster mushrooms

Try this comfort bowl of mutton soup with broccoli and oyster mushrooms for brothy brunches, lunches and dinners.
Ingredients:
- Minced mutton: 300gm
- Finely chopped garlic: 1 teaspoon
- Finely chopped green chillies: 1 teaspoon
- Broccoli cut into small flowers: 1 small cup
- Roughly chopped oyster mushrooms: 1 medium cup
- Butter: 3 tablespoons
- Black pepper powder: 1 teaspoon
- Salt
- Sugar
- Lemon juice
Recipe:
- Blanch the broccoli and keep them dipped in ice water
- Add butter in a pressure cooker and heat well
- Now add the chopped garlic and saute until golden
- Add the minced mutton, chopped green chillies, a pinch of salt and sugar and some black pepper powder. Mix well and saute on high flame for 5-7 minutes without the lid
- Now add the lid and cook on low flame for 5-7 minutes
- Add enough water to make a soup and pressure cook for 4-5 whistles
- Take the lid off, add the broccoli and the oyster mushrooms along with lemon juice, and cook on medium flame without cover for 4-5 minutes
- Check seasoning, add some more black pepper powder and it’s ready
Baked mutton with vegetables and green apples

Not heard of baked mutton before? Well, here’s a recipe you cannot not try!
Ingredients:
- Boneless mutton: 300gm
- Ginger and garlic paste: 1 tablespoon
- Lemon juice: 1 teaspoon
- Baby potatoes cut into halves: 10 pieces
- Baby carrots cut into halves: 5 pieces
- Broccoli cut into small florets: 10-12 pieces
- French beans cut into halves: 10-12 pieces
- Peas: ½ of a small cup
- Asparagus: 2 stems
- Green apple slices: 4
- Fried onion: 1 medium cup
- Finely chopped coriander leaves: 2 teaspoons
- Finely chopped green chillies: 1 teaspoon
- Rosemary: 1 stem
- Thyme: 2 stems
- Black pepper powder: 2 teaspoons
- Salt
- Butter
Recipe:
- Marinate the mutton with ginger and garlic paste, lemon juice, salt and half of fried onion for minimum 30 minutes
- Grease the baking tray with butter
- Marinate the vegetables with a pinch of salt and black pepper powder
- Preheat the oven for 20 minutes
- Place the mutton pieces and the vegetables. Don’t add the apples
- Put the herbs and the green apple pieces
- Sprinkle some black pepper powder and drizzle some butter
- Put the baking tray and bake in convection mode for 30 minutes. Don’t forget to check it at the 15-minute mark
- Once the mutton and veggie are ready, check taste, sprinkle the remaining fried onion, add the green apple slices, sprinkle some more black pepper and a little butter
- Bake for 2-3 minutes and the delish tray bake is ready
Mutton paya soup

Another soul food bowl that’s a winter must.
Ingredients:
- Paya: 4 pieces
- Ginger slices: 1 teaspoon
- Slit green chillies: 4
- Finely sliced onion: 1 large
- Ginger paste: 2 teaspoons
- Roasted black pepper: 1 teaspoon
- Lemon juice: 1 tablespoon
- Finely chopped coriander leaves: 2 tablespoons
- Salt
- Butter
Recipe:
- Pressure cook the payas with water, ginger slices and black peppercorns for 30-40 minutes
- In a kadhai, add butter and sliced onion. Saute until they turn light brown
- Add ginger paste and saute for 2-3 minutes
- Pour the mutton soup, and add salt and lemon juice. Boil for 5-8 minutes
- Add chopped coriander leaves and serve hot
Herbed mutton steak

Tender mutton steak with a glass of red wine. Need we say more?
Ingredients:
- Mutton steak: 4 pieces
- Oregano: 1 teaspoon
- Thyme: ½ teaspoon
- Rosemary: ½ teaspoon
- Chilli flakes: 2 teaspoons
- Lemon juice: 2 tablespoons
- Black pepper powder: 1 tablespoon
- Green chilli paste: 1 teaspoon
- Garlic paste: 2 teaspoons
- Salt
- Sugar
- Butter
Recipe:
- Marinate the steaks with the herbs, lemon juice, black pepper powder, green chilli paste, garlic paste, salt, sugar and some melted butter and leave aside for a minimum 30 minutes. Poke a few holes on both sides too
- Grease a nonstick pan with butter and heat well
- Place the steaks, drizzle some butter, keep the flame low and cook each side for 20 minutes each side
- Check the meat, brush some butter on both sides, sprinkle some black pepper powder and dig in!
