The nine-day food festival will showcase magnificent Nawabi specialities like Hyderabadi Mutton Marag, Pathar-ka-Gosht, Shikampuri Kebab, Nazaqati Boti, Hyderabadi Kacchi Gosht Biryani and more. “We are thrilled to bring the magic of Hyderabadi cuisine to Calcutta through our Daawat-e-Nizaam food festival. With Chef Rehman’s culinary prowess, we aim to transport our guests to the bygone era of Hyderabad, allowing them to savour the rich heritage and flavours associated with this royal cuisine. Hyderabadi cuisine means lots of flavourful biryani and hence the Hyderabadi Kachche Gosht ki Biryani is one of the specialities prepared with kachche gosht (raw meat) marinated in curd and sandwiched between layers of fragrant basmati rice and cooked in a dough-sealed handi overnight. The festival menu also has Murgh Sufiyani Biryani (chicken) and Hyderabadi Tarkari Biryani (veg) to choose from.

Chippe ka Gosht (chippa means earthenware) is a spicy and aromatic gravy with lamb pieces marinated with onion, ginger and garlic paste, salt and chilli powder, and cooked in desi ghee and tomato pulp and finished with complex spice blend.

This scrumptious dish is the Nizami Boti consisting of chunks of mutton marinated in yoghurt, garlic, ginger, chillies, papaya and spices such as garam masala, chilli powder and cumin and grilled to perfection with ghee.
