Here are a few easy recipes for you to whip up from the comfort of your home kitchen...

Strawberry cake with a strawberry sauce

A fresh fruit cake overflowing with strawberries is one of the safest (and tastiest!) desserts you can try your hand at. The ruby wonders are loved by one and all, so do not shy away from creating a dish that heroes them. The recipe is easy and the dish comes together beautifully. Use a hand mixer to ensure the batter is as fluffy as ever. Halve the strawberries or use them whole to decorate the cake at the end. You can also use the leaves of the strawberries to add a pop of colour to the red-and-white plate.

Another version of a strawberry cake, is the strawberry tres leches cake.

Cotton-soft blueberry cake

Have you had your share of blueberry cheesecakes and want to try something different? If you have an eye for the classy and elegant, this is the cake for you. Resembling a beautiful wedding cake (and befitting of one as well), this white tower of absolute goodness has layers of sponge, blueberry puree and whipped cream. If you want, feel free to switch out whipped cream for buttercream. Make sure the ratio of each layer is properly maintained so that the overall flavour is just right. Using cream cheese as the outer layer works perfectly with the tartness of the blueberries, so don’t be wary of this pairing. Top the cake with some whipped cream and fresh blueberries, and dig in!

Mango 'tres leches' cake

A mango tres leches cake is a real mood booster! Its delicate layers are soaked in syrups, all adding a depth of flavour to the dessert. Measure your ingredients perfectly to make sure you get the right consistency — the cake should be moist and yet have a good bite. Using your favourite mangos is a no-brainer, they’ll elevate this bake effortlessly.

Pineapple upside-down cake

A pineapple upside-down cake is a medley of honeyed pineapples, caramelised butter and brown sugar that melts in your mouth. The best way to devour this delight is by warming it up just a little. The sweet-tart flavours of the pineapple tango beautifully with the saltiness of the butter, making it an indulgent treat.
