Dine Art, an innovative culinary concept curated by Hyatt Regency Kolkata, celebrated the 14th Annual Dinner of the Calcutta Wine Club. The idea behind Dine Art was envisioned and created in 2019 by Hyatt Regency Kolkata to celebrate the vision of providing a unique dining experience for their guests, as they enjoy a delicious spread of heartfelt and meticulously curated dishes paired with carefully selected wine to complement it. For the night, there was an eccentric spread of unique dishes by Chef Ishika Konar, executive chef of Hyatt Regency Kolkata. Displaying her culinary finesse, she combined her special delicacies with unique wines paired with every course. The Calcutta Wine Club sponsored wines for the evening.
The menu for the night was spread across multiple courses with both vegetarian and nonvegetarian options. It started with appetisers, followed by the first main, the second main, ending with a dessert.

“Dine Art gives an opportunity to present food with an artistic element. We curated a fusion of cuisines featuring originality, harmony, sculptural form, scent, music between courses, a combination of dishes, and variously flavoured dishes,” said Ishika Konar, executive chef, Hyatt Regency Kolkata
Also spotted was IIHM CEO and founder Suborno Bose along with wife Sanjukta. “This year is very special, because we have gathered after two years of Covid. I want to applaud people in the hospitality industry who have worked so hard after being down in the pandemic. Applause and kudos to every worker in the hospitality industry, they all deserve a pat on their backs. We know good wine and good food are very important for the social fabric, and that is exactly what we are here to enjoy today,” said Suborno Bose.
Pistachio-crusted Grilled New Zealand Lamb Chop served with green peppercorn jus, sour mustard potatoes and asparagus contessa. Cooked to a perfect medium rare, the lamb chop was an absolute delight paired with the wine.
“A concept created by the team at Hyatt Regency Kolkata in 2019 with a vision to give a unique dining experience to the discerning guests at the hotel premises or at the comfort of their homes. Art has been an integral part of everyone’s life and we brought this in the form of music, décor and food. We looked into the overall concept of the event and selected the kind of music to play during the event. The décor has elements of art in every detail, from a selection of flowers to the lighting and an overall ambience. Our culinary artistes dished out each plate with so much passion that it was no more about cooking, but bringing the soul food for our guests. Each plate had art — through the texture, colour, aroma, garnish and lots of love. Bringing all this together in one evening is called Dine Art and we have been very successful doing the same with our superheroes from culinary and service.
