Be it Egypt, Morocco, Turkey or Palestine, the souks or bazaars are full of life and filled with sweet humdrum. As one walks through a souk, you can smell the aroma of freshly-ground cumin or pickled olives and raw spices. The Mezze 9 Studio by Cafe Mezzuna brings you the flavours from the bustling lanes of souks and bazaars. The studio captures everything from marinated olives to the fragrance of freshly-ground cumin. The healthy mezze will make you explore the variety of flavours, as master chef Saby creates his magic by introducing flavours of the street food of the Middle East.

The Mezze 9 studio is a glass cubicle kitchen at the Cafe Mezzuna outlets in Forum and South City Mall. This cubicle is made of glass so that the customers can watch the chef make the dishes freshly in the kitchen. The Mezze 9 menu highlights the delicacies made from homegrown pickles, the flavours of the afternoon Arabian street food and the evening fiesta at the souk. t2 dropped by Cafe Mezzuna at Forum Mall for the launch of the Mezze 9 Studio.

Chef Saby, mentor and consultant of Cafe Mezzuna (left), said: “The Mezze 9 Studio will help our patrons to explore simple flavours while appreciating ‘less is more’. Our breads are freshly finished in the oven, right in front of you. The Mezze 9 Studio menu has numerous options of breads and dips filled with Middle Eastern flavours. We have just started to build up our customers’ appetite as there are lots more in store. This will be a genuine effort to bring out the side of the cuisine less explored.” He is seen with Kinkshuk Kundu, brand chef of Cafe Mezzuna (right).
