The men behind 107-year-old Adam’s Kabab Shop on Zakaria Street

This century-old shop is not only carrying forward a family legacy but is a thread in the spool of Kolkata’s food heritage

Established in 1918, the 107-year-old Adam’s Kabab Shop at 60 Phears Lane, Chuna Gali, is one of the most talked-about kebab stops in Kolkata, especially during Ramzan. It is best known for its succulent beef suta and boti kebabs. This family-run business also had a hotel in Chandni Market which opened around the same time as the shop in Zakaria Street, but while the former outlet discontinued, the latter continues to remain a city favourite

The shop was started by Shubani Mia, who named it after his son Md. Adam. It is currently helmed by Md. Adam’s son Md. Salahuddin. “I love boti kebab but suta kebab is our specialty. It takes almost all day to prepare the spices and meat for the kebabs,” said Md. Salahuddin (in picture), who focuses on the main branch, which is the backbone of the business

People from all corners of the city visit to savour the soft and juicy kebabs. According to Md. Wasif, chicken suta and boti kebabs and mutton suta kebabs were introduced in the last 6-7 years. The shop needs 40 kg of beef and 15-20 kg of chicken and mutton every day to meet the demands of its bustling business!
