No one likes to waste food. Estimating quantities can be challenging, especially in families where some may eat more, some less and unexpected guests might show up. Before refrigerators became common, managing leftovers was especially difficult.
Cool revolution
Refrigerators were introduced in India in 1958, transforming food storage. Before that, food spoiled quickly as bacteria thrived in the hot, humid climate, releasing toxins. Eating spoilt food often resulted in food poisoning.
The arrival of refrigerators marked a revolution in food preservation. Traditional methods like salting, pickling and fermenting were no longer the only options — food could now be stored safely in the fridge. However, it took time for the public to trust this technology and learn to use it effectively. Even today, some misunderstandings persist about proper refrigerator use.
Spoilt food
Signs of spoilage include a bad smell, slimy texture and an unusual appearance. Even if food doesn’t look or smell bad, toxins released by bacteria can still cause illness. When in doubt, throw it out.
How to reheat
Once removed from the fridge, reheat food immediately to 165°F or 74°C. Stir to ensure even heating. Use shallow containers when reheating in a microwave. Heating food in a microwave is safe — it does not make food radioactive or alter its chemical composition.
Food poisoning
Common symptoms include diarrhoea, vomiting, fever or blood in the stool. Treatment involves:
Hydration: Replace lost fluids with water, oral rehydration salts (ORS) or rice kanji.
Diet: Start with an easily digestible meal like pressure-cooked rice and moong dal. Take small servings, alternating with water every 15 minutes. Gradually introduce foods like bananas as recovery progresses. Seek medical attention if symptoms worsen, urine is not passed for eight hours or if there’s blood in the stool.
