This vegetarian sushi is a combination of sushi rice and green vegetables. The maki sushi has a filling of cucumber, asparagus, spinach and green zucchini with a fresh green seaweed salad on top and sesame dressing. Sweet and sour, with a hint of sesame flavour, the sushi is served with soy, wasabi and pickled ginger.

A kind of uramaki roll, this preparation from the Fort Knox address has crispy sweet potatoes, cream cheese, chilli oil, jalapenos, cucumber and iceberg lettuce for the soft yet crunchy filling. Jalapenos and chilli oil lend a surprisingly spicy touch to the sushi, which is an amalgamation of flavours.

The Park Street restaurant that offers its guests five varieties of sushi, serves Fruits De Mer XO as a non-vegetarian uramaki. It is prepared following the inside-out method of rolling sesame seed drizzled sushi rice with a filling of prawn tempura. Here, you will find the nori on the inside. On top goes a more umami, XO sauce prepared in-house using dry shrimp.
Chef speak: “Fruits De Mer technically means fruits of the ocean (fish and all the sea food). We use prawns in the dish, hence, the name,” said Debraj Bose, director, Pa Pa Ya.

Following the classic style of preparing maki, the ingredients are rolled with a slightly toasted and crispy nori. The vinegared rice is wrapped with grilled chicken cooked in teriyaki sauce, mayo and wasabi, with the nori as the outermost layer. It is rolled from one end tightly without leaving any air gap in between and served with wasabi, gari and soy.

9. Kappa Mango Gunkan@ Wasabee
The name of this sushi from the Oriental restaurant in Kalikapur and Deshapriya Park, has a popular association with Japanese folklore. Here, it is presented as a summer special using the king of fruits and is quite a deviation from a traditional style of making Gunkan sushi, which the dish is inspired from. The exterior is replaced with a cucumber shaped like a cup, instead of rice or nori, with ripe mango cubes placed on top.
Chef speak: “Gunkan sushi refers to a sushi that’s presented like a boat. It is usually prepared with the nori sheet on the outside, shaped like a cup, with the ingredients placed on top,” said Sanjay Subba, the Japanese speciality chef of the restaurant.
