1. Samurai Sushi @ Threesixtythree, The Oberoi Grand

Usually a choice for a maki sushi that has nori (seaweed) sheet on the outside, the combination of salmon and avocado rolled with vinegared rice, along with veggies and nori, finds itself packaged as uramaki (inside out sushi) here. Served with pickled ginger (gari), wasabi and soy sauce, the Samurai Sushi is garnished with jalapeno and spicy mayonnaise. Sweet, salty and sour, the dish hits the palate with a riot of prominent flavours.

Chef speak: “The idea of naming the dish Samurai is derived from the finest Japanese warriors. The delectable flavours of this fusion sushi dish make it remarkable just like the aristocratic warriors,” said chef Akinika Zhimomi, supervisor of the restaurant.

2. Midori Kawa Ura Maki @ Zen, The Park

This vegetarian sushi is a combination of sushi rice and green vegetables. The maki sushi has a filling of cucumber, asparagus, spinach and green zucchini with a fresh green seaweed salad on top and sesame dressing. Sweet and sour, with a hint of sesame flavour, the sushi is served with soy, wasabi and pickled ginger.

Chef speak: “Sushi is traditionally made with medium-grain white rice but can be prepared with brown rice or short-grain rice. Daikon radish or pickled daikon and carrot are popular garnishes for the dish. Maki sushi comes in different sizes and cuts,” said Ananchai Suttison, the executive chef oriental.

3.California Roll @ Nori, The Westin

This popular sushi roll has cucumber, Japanese mayonnaise, crab sticks, avocado and omelette sticks wrapped in sushi rice. This tangy and sweetish sushi has tobiko or flying fish roe on top.

Chef speak: “The sushi chefs maintain the health of their hands. They try to avoid sunlight so that their skin remains soft and does not harm the sushi,” said Sanjit Dey, sushi chef.

4. Crispy Sweet Potato, Jalapeno and Cream Cheese Roll @ The Fatty Bao

A kind of uramaki roll, this preparation from the Fort Knox address has crispy sweet potatoes, cream cheese, chilli oil, jalapenos, cucumber and iceberg lettuce for the soft yet crunchy filling. Jalapenos and chilli oil lend a surprisingly spicy touch to the sushi, which is an amalgamation of flavours.

5. Fruits De Mer XO @ Pa Pa Ya

The Park Street restaurant that offers its guests five varieties of sushi, serves Fruits De Mer XO as a non-vegetarian uramaki. It is prepared following the inside-out method of rolling sesame seed drizzled sushi rice with a filling of prawn tempura. Here, you will find the nori on the inside. On top goes a more umami, XO sauce prepared in-house using dry shrimp.

Chef speak: “Fruits De Mer technically means fruits of the ocean (fish and all the sea food). We use prawns in the dish, hence, the name,” said Debraj Bose, director, Pa Pa Ya.

6. Teriyaki Chicken Maki @ The Orient

Following the classic style of preparing maki, the ingredients are rolled with a slightly toasted and crispy nori. The vinegared rice is wrapped with grilled chicken cooked in teriyaki sauce, mayo and wasabi, with the nori as the outermost layer. It is rolled from one end tightly without leaving any air gap in between and served with wasabi, gari and soy.

Chef speak: “Different regions of Japan have adapted their own style of preparing the maki sushi (‘maki’ means ‘to roll’),” said Ghanashyam Das, cluster executive chef.

7. Crunchy Fish Dried Tomato Sushi @ Momo I Am

This flavourful sweet-and-sour preparation from the Sector V outlet, has the sushi rice on the outside along with tobiko (fish roe). The inside has a slightly sour and acidic taste with sun-dried tomatoes, tempura batter-fried basa and nori. Garnished with Japanese mayo, the sushi is served with other accompaniments in order to enhance the taste.

Chef speak: “Sushi, which means ‘sour-tasting’, refers to the rice and not the fish because fish is just the topping. It is traditionally eaten with your finger, chopsticks are typically only used to eat sashimi (raw slice of fish),” said Manoj Rajbaashi, executive chef.

8. Tuna Nigiri @ The Sushi Oke

This sushi has tuna placed on top of the sushi rice and tied with a strip of seaweed. This mild-flavoured sushi at the New Alipore address tastes slightly salty and is best enjoyed by dipping the tuna side of the sushi in soy and a pinch of wasabi.

Owner speak: “This is called the nigiri variety of sushi as the rice ball is served using a topping,” said Karan Agarwal, owner of the restaurant.

9. Kappa Mango Gunkan@ Wasabee

The name of this sushi from the Oriental restaurant in Kalikapur and Deshapriya Park, has a popular association with Japanese folklore. Here, it is presented as a summer special using the king of fruits and is quite a deviation from a traditional style of making Gunkan sushi, which the dish is inspired from. The exterior is replaced with a cucumber shaped like a cup, instead of rice or nori, with ripe mango cubes placed on top.

Chef speak: “Gunkan sushi refers to a sushi that’s presented like a boat. It is usually prepared with the nori sheet on the outside, shaped like a cup, with the ingredients placed on top,” said Sanjay Subba, the Japanese speciality chef of the restaurant.
